Directions

Spread tomatoes onto bottom of parchment-lined half-sheet pan (or onto bottom of parchment-lined small pan for trial recipe); drizzle with dressing. Bake in 250ºF (120ºC) standard oven 1 hour.

For each serving: Spread 1 Tbsp. (15 mL) mayonnaise onto each of 2 toast slices. Cover 1 toast slice with 1 lettuce piece and 4 tomato slices; top with second toast slice, second lettuce piece and 2 bacon slices. Cover with third toast slice. Cut sandwich diagonally into 4 triangles; secure each with long sandwich pick.

Special Extra
Bake bacon in oven until almost done. Remove from oven, brush with maple syrup and continue baking until crisp.
