Pork Chops
bone-in pork chops (4 oz./115 g) 4 lb. [1.8 kg] 16 each
canola oil 2 oz. [60 g] 1/4 cup [50 mL]
seedless watermelon, peeled, diced 1 lb. [625 g] 1 qt. [1 L]
grape tomatoes, halved 1.25 lb. [565 g] 1 qt. [1 L]
torn fresh basil leaves 4 oz. [115 g] 1 qt. [1 L]
Kraft Balsamic Vinaigrette Dressing 4 oz. [115 g] 1/2 cup [125 mL]

Directions

Gingered Peach BBQ Sauce: Combine all ingredients in saucepot. Bring to simmer on medium heat, stirring occasionally. Remove from heat; set aside.

For each serving: Brush 2 chops with 1/2 Tbsp. (7 mL) oil. Place on a sizzle platter. Bake in 450ºF (230ºC) standard oven 5 min.

Brush chops with 1 Tbsp. (15 mL) Peach BBQ Sauce. Bake an additional 5 to 8 min. or until sauce is caramelized and internal temperature reaches 145ºF (63ºC). Remove from oven; let rest 3 min.

Meanwhile, toss 1/2 cup (125 mL) each of the watermelon, tomatoes and basil with 1 Tbsp. (15 mL) dressing.

Plate 2 pork chops with 1-1/2 cups (375 mL) watermelon salad on the side.

Variation
Substitute boneless skinless chicken breasts for the pork chops. Prepare as directed, cooking to an internal temperature of 165ºF (74ºC).
