Directions

For each serving: Spread 1 bread slice with 2 tsp. (10 mL) Miracle Whip. Top with 1/4 cup (50 mL) spinach, 3 tomato slices, pinch of pepper, 1 egg, 2 bacon slices broken in half and 3 Tbsp. (45 mL) cheese; transfer to small baking sheet.

Broil 6 inches from heat 2 to 3 min. or until cheese is melted. Serve immediately, sprinkled with 1 tsp. (5 mL) scallions.

Variation
For a spicy twist, prepare using Kraft Habanero Heat Shredded Cheese.
Special Extra
Sprinkle sandwich with 1 tsp. (5 mL) of your favourite chopped fresh herbs, such as parsley, cilantro, basil or dill. Or, substitute chopped fresh chives for the scallions.
Substitute
For more peppery flavour, substitute baby arugula for the spinach.
