green beans, trimmed, blanched 8 oz. [225 g] 3 cups [750 mL]
cherry tomatoes, halved 5.5 oz. [155 g] 1 cup [250 mL]
red peppers, chopped 5 oz. [140 g] 1 cup [250 mL]
red onions, finely chopped 2.5 oz. [70 g] 1/2 cup [125 mL]
feta cheese, crumbled 1.75 oz. [50 g] 1/3 cup [75 mL]
fresh parsley, finely chopped 10 g 1/4 cup [50 mL]

Directions

Combine first 6 ingredients in large bowl.

Whisk garlic and dressing until blended. Add to salad; toss until coated.

Recipe can be prepared ahead of time. Refrigerate up to 1 day before serving.
How to Blanch Fresh Green Beans
Add beans to saucepan of boiling water; cook, uncovered, 2 to 3 min. or just until bright green in colour. Drain, then immediately plunge beans into a bowl of ice water. When completely cool, drain beans and pat dry.
