Directions

Mix mayonnaise and lemon zest until blended.

Sprinkle fish with salt; place on well-oiled grill. Cook 4 min. on each side or until fish flakes easily with fork.

For each sandwich: Spread each of 2 toast slices with 1 Tbsp. (15 mL) mayonnaise mixture. Fill with 2 bacon slices, 1 fish fillet, 3 tomato slices and 1 lettuce leaf to make sandwich.

Variation
Omit salt. Substitute 2 lb. (900 g) smoked salmon (or 2 oz. [60 g] smoked salmon for trial recipe) for the grilled fresh salmon fillets.
