desiccated unsweetened coconut 1-1/4 oz. [35 g] 1 qt. [1 L]
red onions, small dice 4 oz. [115 g] 1 cup [250 mL]
fresh cilantro, chopped 1-1/4 oz. [35 g] 1 cup [250 mL]
fresh mint, chopped 1-1/4 oz. [35 g] 1 cup [250 mL]
green mangos, peeled, seeded and each cut into 6 slices 5 lb. [2.2 kg] 8 each

Directions

Sweet Orange-Curry Dressing: Mix ingredients until well blended. Refrigerate until ready to use.

For each serving: Combine 1/3 cup (75 mL) each cucumbers, diced mangos and nuts; 1/4 cup (50 mL) coconut; and 1 Tbsp. (15 mL) each onions, cilantro and mint. Add 1 Tbsp. (15 mL) Sweet Orange-Curry Dressing; mix lightly. Arrange 3 mango slices on serving plate; top with salad.
