butter, melted 2 tsp. [10 mL]

sour cream 2 tsp. [10 mL]
Forty Creek Whiskey BBQ Sauce 2 tsp. [10 mL]
scallions, sliced 1/2 tsp. [2 mL]

Directions

Brush potato(es) with oil; prick in several places with fork. Place on baking sheet. Bake in 400ºF oven 40 to 45 min. or until tender; cool slightly.

Meanwhile, mix shredded cheeses, red peppers, mayonnaise and celery salt until blended.

Cut potatoes lengthwise in half. Scoop out centres, leaving 1/4-inch-thick shells. Discard removed potato centres or reserve for another use. Place potato shells, cut sides up, on baking sheet; brush insides with butter. Sprinkle with kosher salt and black pepper.

Bake 10 to 15 min. or until golden brown. Fill with cheese mixture; bake 5 min. or until melted. Meanwhile, mix sour cream and barbecue sauce until blended.

Drizzle sour cream mixture over potatoes; sprinkle with scallions.
