Directions

Mix mayonnaise and Sriracha sauce until blended.

For each serving:

Top 1 bread slice with 1 cheese slice, 56 g caramelized onions, 40 g cheese curds and 2 bacon slices; cover with second each cheese slice and bread slice.

Spread outside of sandwich evenly with 1 fl oz (29.5 mL) mayonnaise mixture.

Cook in small nonstick skillet on medium heat 1 to 2 min. on each side or until cheese is melted and sandwich is golden brown on both sides.

Variation
Adjust the heat level of sandwich according to taste - either omit the Sriracha sauce, or increase it as desired.
Make Ahead
The mayonnaise mixture can be mixed together ahead of time. Refrigerate up to 24 hours before using as directed.
