watercress, tough stems removed 2 oz. [60 g] 3/4 cup [175 mL]
fennel, thinly sliced 6 oz. [170 g] 1-1/3 cups [325 mL]
pomegranate seeds 2 oz. [60 g] 1/2 cup [125 mL]
Parmesan cheese shards 4 oz. [115 g]
croutons 3 oz. [85 g] 1 cup [250 mL]

Directions

Brush each chicken breast with 1 tsp. (5 mL) dressing. Refrigerate up to 24 hours.

Grill chicken until done (170ºF), turning halfway through the cooking time. Cover to keep warm.

For each serving: Fan out about 2 oz. (60 g) lettuce (about 6 leaves) on plate; place 15 g watercress at base of lettuce fan. Top lettuce with 1/3 cup (75 mL) fennel, 2 Tbsp. (30 mL) pomegranate seeds, 1 oz. (30 g) Parmesan shards and 1/4 cup (50 mL) croutons.

Slice 1 chicken breast; arrange over watercress. Drizzle salad with 5 tsp. (25 mL) of the remaining dressing.

Substitute
Substitute baby spinach for the watercress and/or Asiago cheese for the Parmesan cheese.
Variation
Instead of cooking the chicken on the grill, mark both sides of chicken breasts on the grill, then roast in a 400ºF oven until done.
