skinless salmon fillets, finely chopped 8 oz. [225 g] 1 cup [250 mL]
dry whole wheat bread crumbs 0.75 oz. [20 g] 2 Tbsp. [30 mL]
grainy Dijon mustard 5 g 1 tsp. [5 mL]

Directions

Mix cucumbers, 1-1/2 cups (375 mL) Miracle Whip, 6 Tbsp. (90 mL) chives, 2 Tbsp. (30 mL) lemon zest and 1/4 cup (50 mL) lemon juice. (For trial recipe, mix cucumbers with 1/4 cup [50 mL] Miracle Whip, 1 Tbsp. [15 mL] chives, 1 tsp. [5 mL] lemon zest and 2 tsp. [10 mL] lemon juice). Refrigerate 30 min. or until chilled.

Combine salmon, bread crumbs, mustard, and remaining Miracle Whip, chives, zest and juice. Portion mixture into 48 mounds (1.25 oz. [35 g] each) onto foil-lined baking sheets sprayed lightly with cooking spray (or portion into 8 mounds for trial recipe). Flatten each mound to 1/2-inch thickness.

Broil salmon cakes, 6 inches from heat, 3 to 4 min. or until salmon cakes are done and tops are golden brown. Serve each salmon cake topped with 1 Tbsp. (15 mL) aioli.

Instead of broiling, bake salmon cakes in 350ºF (180ºC) oven on parchment-lined baking sheets 12 to 15 min. or until salmon cakes are done and golden brown.
Variation
Replace half the amount of chives with chopped fresh dill.
