Cajun Chicken BLT

Ingredients

2 lb. Boneless skinless chicken breasts (4 oz. each)
2 cups Cajun seasoning
4 slices Thick-sliced sandwich bread toasted
2 cups Renée's Creole Dijon Sauce
4 strip Bacon, cooked
2 lb. Leaf lettuce leaves
6 slices Tomatoes, sliced

Instructions

Preparation Steps
  • Rub
    Chicken with Cajun seasoning. Preheat grill to medium/high; cook chicken 5 to 6 minutes on each side or until chicken is cooked through (170°F).
  • For each serving:
  • Spread
    One side of each toast slice with 1/2 Tbsp sauce.
  • Place
    1 chicken breast half, 2 bacon slices, 1 lettuce leaf and 3 tomato slices on toast slice; cover with toast slice. Cut crosswise in half to serve. Secure each half with 4 inch frilled toothpick.
