Mango, Jicama and Raspberry Salad

Ingredients

1 qt. Watercress
1/4 qt. Jicama, peeled, julienned
1/4 qt. Mangoes, peeled, pitted and julienned
2 cups Fresh raspberries
3 cups Manchego cheese, shaved
1 cups Slivered almonds, toasted
1 cups Red onions, thinly sliced

Instructions

Preparation Steps
  • Combine
    Watercress, jicama, mangos and raspberries in large bowl.
  • For each serving:
  • Toss
    1 cup (250 mL) of the watercress mixture with 1 Tbsp. (15 mL) of the dressing; place on serving plate. Top with 2 Tbsp. (30 mL) cheese and 1 Tbsp. (15 mL) each almonds and onions.
