Cobb Salad

Originating in the 1920's, this version uses Serrano ham in place of the bacon and adds tangy Catalina Dressing. It's made as a large salad to share - a nice trendy approach to dining.

Ingredients

6 lb. 50-50 iceberg-romaine lettuce blend
1 each Hard-cooked eggs, peeled, quartered
1/2 qt. Grilled chicken breast strips
1/3 qt. Roasted red peppers, cut into strips
1/3 qt. Avocados, large diced
1/4 cups Grape tomatoes, halved
1/4 cups Serrano ham, thinly sliced
2 cups Crumbled blue cheese

Instructions

Preparation Steps
  • For each salad:
  • Place
    6 oz. (170 g) lettuce mix in bottom of serving bowl. Top with rows of 3 oz. (85 g) each chicken breast and peppers, 1 quartered egg, 2 oz. (60 g) each avocados, tomatoes and ham, and 1 oz. (30 g) cheese. Serve with 1 oz. (30 g) dressing in ramekin on the side.
