Grilled Tarragon Chicken Salad Wraps

This versatile salad can be rolled up for a portable version of a wrap, or the cabbage can be chopped and tossed with the other ingredients.

Ingredients

Chicken Salad
1 qt. Grilled boneless skinless chicken breasts, diced
2 cups Celery, finely diced
1 cups Scallions, chopped
1 cups Fresh tarragon, chopped
1/8 cups Cracked black pepper
Salad Wraps
3 each Napa cabbage leaves
6 slices Plum tomatoes, sliced
1/4 qt. Cucumbers, thinly sliced
3 cups Jicama, julienned

Preparation Steps
  • Chicken Salad:
  • Combine
    Ingredients in bowl; toss lightly.
  • For each serving:
  • Arrange
    3 cabbage leaves on dinner plate. Top evenly with 2 oz. (60 g) tomatoes, 1 oz. (30 g) cucumbers, 0.75 oz. (20 g) jicama and 1 cup (250 mL) Chicken Salad.
