Three Cheese Carolina Poutine

Ingredients

1 fl oz Red wine vinegar
12.5 g Shichimi togarashi
1/2 tbsp. Sugar
1/8 tsp. Salt
1/4 piece Shallot, minced
25 g Pumpkin, peeled, thinly sliced
1/4 piece Fresh jalapeño pepper, thinly sliced
2 fl oz Chicken stock
1 fl oz Red wine
3/4 fl oz Heinz Carolina Vinegar Style Tangy BBQ Sauce
1/4 fl oz Heinz Yellow Mustard
39 g Smoked boneless skinless turkey breast, shredded, divided
1 tsp. Corn starch
1/2 fl oz Water
50 g Montreal smoked meat, sliced
225 g Frozen sweet potato fries, cooked
42.5 g Kraft Cheddar Cheese Curds
29 g Kraft Shredded Asiago
29 g Kraft Shredded Parmesan

Instructions

Preparation Steps
  • Bring
    Vinegar, togarashi, sugar, salt and shallots to boil in saucepan on medium-high heat. Add pumpkin and peppers; stir. Remove saucepan from heat. Let stand 30 min. Drain pumpkin mixture; discard strained liquid.
  • Combine
    Chicken stock, wine, barbecue sauce, mustard and 45 g turkey (or 11.25 g turkey for Trial Recipe) in another saucepan. Bring to boil on medium-high heat; simmer on low heat until gravy is reduced to 375 mL (or reduced to about 90 mL for Trial Recipe). Mix corn starch and water until blended; whisk into gravy. Cook and stir 1 min. or until thickened. Strain gravy. Discard the strained solids. Keep strained gravy warm until ready to use.
  • FOR EACH 4-SERVING SHARED APPETIZER:
  • Place
    50 g Montreal smoked meat, 27.5 g of the remaining smoked turkey and 225 g fries in large serving dish. Top with 35 g pumpkin mixture, 42.5 g cheese curds, and 29 g each Asiago and Parmesan. Drizzle with 90 mL warm gravy.
